Do you ever have those mornings when you wake up, walk into the kitchen and inwardly (or even outwardly) groan with the sight before you? Pots, pans, dishes galore, just waiting for the kitchen fairy to clean them.
We have a tiny kitchen. Two people working in the kitchen is… amusing—mainly for others watching. The kitchen was NOT designed for multiple people cooking. It’s your stereotypical Spanish kitchen from the 70’s where mamá cooked, cleaned and no one else entered her domain without permission and a good reason. In a tiny kitchen even a small mess feels like a giant mess, especially with no dishwasher.
The day before my hubby made a delicious homemade mac ‘n cheese and I had been canning some apple butter I made and we sort of ran out of time to clean up before running to a friend’s Drum and Bass DJ gig. By the time we got back we were much too tired to even think about cleaning the kitchen. So, for morning it was left.
With the mess there was, I couldn’t even get it to fill the kettle to make a morning cup of tea (oh the travesty!) so kitchen cleaning seemed to be the only way forward. Anything for that morning cuppa, right?
While cleaning up, I realized that the bananas were on the verge of going off—which means: perfect for baking—and I tried to see what we had in the house that I could pair with them. Not much, we didn’t even have eggs. What I did find was a couple of apples from our trees, oats and a few spices.
And so, with a little squashing, grating and mixing, and with the help of our handy air-fryer, these delicious Banana, Apple, Oat Fritters were born. I highly suggest eating them warm, and if you have any apple butter, that’s a yummy addition to spread on top. These delicious fritters are dairy-free, egg-free, gluten-free and no sugar added, so if you’re looking for a healthy morning snack that can suit pretty much anyone, I highly recommend trying these out!
