I woke up the other morning with a hankering for muffins. My tastebuds craved something buttery, sweet and melt in your mouth delicious. There is something about muffins in the morning, that just feels decadent and gives that “spoil me” moments. And honestly, “spoil me” moments feel very important these days.

Super buttery muffins are amazing, but I wanted to try to create something that, while not compromising on flavor, was a decently healthy treat. Because, with the amount of “spoil me” moments needed these days, it’s vital that they’re not all overloaded with butter and sugar. Soul food is important, but so is eating healthily on a consistent basis.

I think I was able to do that with these muffins. Plus, as making the muffins was a last-minute decision, I had to stick to the ingredients that I had on hand. Which means, they're a creative mixture of goodness. I almost thought I should call them “everything but the kitchen sink” muffins. A jumble of ingredients, but they turned out fantastic!

You don’t have to believe me. Believe my hubby and our friend who went back for seconds (maybe thirds?) and—our friend—took more home for later.

So without further ado, here’s the Cranberry, Cherry Raisin and Apple Oatmeal Muffins.
